In the Veggie Kitchen: Thanksgiving - The Menu

As mentioned yesterday, in preparation for the upcoming holiday, we once again teamed up with The Chalkboard Mag for a get-together both festive and delicious. On the menu for this year’s gathering: a vegetarian feast prepared by the incomparable Pamela Salzman. Boasting incredible flavors and inventive alternatives to the standard fare, the meal hit all the right notes – without leaving us feeling stuffed.

The components of our Thanksgiving feast: Endive Leaves with Figs, Hazelnuts and Honey Goat Cheese, a Kale Salad with Cornbread Croutons, Pickled Onions, and Sweet & Spicy Pecans, Butternut Squash Soup, Roasted Delicata Squash with Pomegranate Pistachio Relish, a Green Bean Casserole with Shitake “Bacon”, and the most incredible Pumpkin Bread Pudding with Apple-Caramel Sauce, which, for me, took the cake. Needless to say, everything was absolutely delicious – and I have officially added some new dishes to my upcoming holiday menu. XXJKE
