Healthy Start: Coconut Breakfast Bowl Recipe

By now my love of coconut is far from a secret. But you could say the discovery of Coconut Kitchen: Nature’s Most Beautifying Superfood was what really sealed the deal in making me a true coco aficionado. It’s full of coconut-based dishes for morning, noon and night, and even beauty formulas, too. (More on that tomorrow!) The author is the brilliant Venice-based chef and raw-food expert Meredith Baird. I couldn’t wait to try one of her book’s breakfast recipes incorporating coconut yogurt with fruit and lemon zest—I substituted the out-of-season stone fruit for blood orange. It’s the perfect fresh, wholesome way to start each day. XXJKE
