By now my love of coconut is far from a secret. But you could say the discovery of Coconut Kitchen: Nature’s Most Beautifying Superfood was what really sealed the deal in making me a true coco aficionado. It’s full of coconut-based dishes for morning, noon and night, and even beauty formulas, too. (More on that tomorrow!) The author is the brilliant Venice-based chef and raw-food expert Meredith Baird. I couldn’t wait to try one of her book’s breakfast recipes incorporating coconut yogurt with fruit and lemon zest—I substituted the out-of-season stone fruit for blood orange. Coconut Yogurt Bowl Recipe

Ingredients

  • 1/2 cup 118 ml coconut yogurt
  • 1 medium blood orange thinly sliced
  • 1 tablespoon lemon zest
  • 1 tablespoon raw honey
  • pinch sea salt

Arrange each yogurt bowl as you wish with the ingredients listed above. The sweetener and lemon zest can be added as garnishes or stirred into the yogurt.
