Strawberry Sundaes with Buttermilk Biscuits and Whipped Cream

Ingredients

  • 1 qt 1 l ice cream your favorite strawberry flavor
  • 1 pt 1/2 l strawberries fresh, washed, stemmed and quartered
  • 1/4 cup 59 ml sugar favorite
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 pt 1/2 l whipping cream heavy, whipped into whipped cream
  • 1 pt 1/2 l strawberries fresh, sliced, and sprinkled with sugar, if desired
  • 4 biscuits buttermilk, halved (see notes for link to recipe)

To make the strawberry sauce

In a small sauce pan combine strawberries, sugar, lemon juice and water over medium-high heat. Boil and bring to a simmer for 10 minutes, until strawberries are cooked down. Puree strawberry mixture in a blender; let cool.

To assemble sundaes

Start with the bottom of a biscuit in a bowl of a glass. Add a scoop of ice cream and drizzle with strawberry sauce, add whipped cream and fresh sliced strawberries. Repeat with a second layer of all elements, ending with whipped cream and fresh strawberries. Enjoy!!!
